Ingredients

  • 1 cup quinoa, rinsed

  • 2 cups vegetable broth

  • 1 can black beans, rinsed and drained

  • 1 cup corn, frozen or fresh

  • 1 bell pepper, diced

  • 1 medium zucchini, diced

  • 1 cup cherry tomatoes, halved

  • 1 avocado, diced

  • 2 tablespoons olive oil

  • 2 tablespoons Flabby Daddy Taco Fiesta seasoning

  • Salt and pepper to taste

  • Fresh cilantro, for garnish

  • Lime wedges, for serving

Steps

  1. In a medium pot, combine quinoa and vegetable broth; bring to a boil.

  2. Reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.
